Gluten-Free Air Fryer Beignets

Soft gluten-free air fryer beignets made with a yeast-raised dough, lightly brushed with butter, and finished with powdered sugar.

Ingredients
  

  • 2 1/4 cups gluten-free bread flour blend made for yeast baking and containing xanthan gum, plus more as needed
  • 2 1/4 tsp instant yeast
  • 1/4 cup granulated sugar
  • 1/2 tsp fine salt
  • 3/4 cup warm milk about 105–110°F
  • 1 large egg room temperature
  • 2 tbsp unsalted butter melted and cooled slightly
  • 1 tsp vanilla extract
  • neutral oil spray
  • 1/3 cup powdered sugar verify gluten-free labeling if needed

Equipment

  • 1 Air fryer
  • 1 Large mixing bowl
  • 1 Rolling pin optional
  • 1 Parchment paper for shaping only
  • 1 Pizza cutter or knife

Method
 

  1. Whisk the gluten-free bread flour, instant yeast, sugar, and salt in a large bowl.
  2. Add the warm milk, egg, melted butter, and vanilla. Beat with a sturdy spoon or mixer for about 2 minutes. The dough should be soft and slightly sticky, not dry.
  3. Cover the bowl and let the dough rise in a warm place for 45–60 minutes. Gluten-free dough may expand without fully doubling.
  4. Place the dough between two lightly floured sheets of parchment. Press or roll to about 1/2-inch thick, then cut into twelve 2-inch squares.
  5. Preheat the air fryer to 350°F for about 3 minutes if your model benefits from preheating.
  6. Lightly spray the basket and arrange the dough squares in one layer with space between them. Mist the tops lightly. Air fry at 350°F for 6–8 minutes, turning halfway, until puffed and golden. Cook in batches if needed.

  7. Brush the warm beignets lightly with melted butter if desired and dust generously with powdered sugar. Serve immediately.

Notes

  • Gluten-free flour blends absorb liquid differently. Use a bread-flour blend intended for yeast baking and adjust with 1 tablespoon flour or milk only when needed.
  • Do not replace the bread-flour blend with almond or coconut flour in the same quantities.
  • For strict gluten avoidance, verify every packaged ingredient is labeled gluten-free and prevent contact with wheat flour, shared utensils, or unclean surfaces.
  • Do not place loose parchment in the air fryer; use it only for shaping unless your appliance instructions allow weighted parchment.
  • Beignets are best served warm. Reheat briefly at 320°F and add fresh powdered sugar.
